Current Food Designer, Future Dietician
Since swerving from the corporate marketing world in 2016, I have been pursuing undergraduate coursework in Nutrition and Food Science at UT Austin. Through the fantastic mentorship and learning UT provides, I am well on my way to completing fundamental coursework and pursuing a career in dietetics. This page is dedicated to nutrition and dietetic related happenings as well as serving as an online portfolio for projects.
Fast facts about Nicole’s interest in nutrition:
- Clearly food plays an important role in my life
- After endless struggles with doctors and the medical system, I decided to take a more hands-on approach with my health. After considering a career in massage therapy, it became clear that I needed a fundamental understanding of how bodies work and how food transforms us.
- I believe in holistic health practices can lead to a more pain-free, fulfilling life
- Balance is my mantra and I’m not a fan of ultimatums or absolutes when it comes to how to best nourish each individual’s body
- I am not a registered dietician (yet) so any statements made on this blog are subjective or are referenced with evidence-based science to ensure validity
Skills:
- Highly skilled cook and able to adapt recipes to feed a crowd or align with specific dietary restrictions
- I love leading. You can ask any of my project groups, I’m always the one creating deliverable deadlines and making sure we stay on track.
- Creating repeatable processes and templatizing things is key – ensuring that anything I do can be scaled and applied to a wider audience
